When referring to a wine or grape, it is made from or belonging to a single specified variety of grape. Varietal Honey is produced when approximately 45% of the nectar is collected of one species of plant and the honey takes on the flavor of that species. This process usually occurs when honey bees are used to pollinate large orchards, (such as orange, almond, and apple groves as well as fields of blueberry, blackberry , etc.
